The BBQ Sauce Debate
Tons of folks love smoked meat wet to the bone with sauce. Just as many want nothing getting between them and their meat but a tasty dry rub.

Q - Sauce Basics
Barbecue sauce is usually a tomato and sugar based mixture used accent the flavor of the meat. Many aspiring pit master improperly use Q-Sauce. One mistake is putting it on the meat to early in the cooking process and burning it.
The next big mistake is drenching the meat with the stuff, covering up the flavor of the meat. That's why I recommend serving the sauce on the side, or applying it after the meat rests.
| BBQ Tip: If you are going to baste these sauces onto the meat during the end of the cooking process it's a good idea to "cut" the sauce a little with some water, oil, beer, or vinegar. |
