Good quality pork is very lean, so it requires a little TLC and slight adjustments to smoking practices. 

The key to smoking pork is to cook it long enough to get it to the desired internal temperature, 160 to 190 degrees depending on the cut of meat.

The great thing about the hog is that you can use just about every bit of it, we like to buy half a hog at a time.
